Tonight I stopped and helped a disabled car and it's passengers on the side of the highway.
- 2 a.m.
- flat tire
- 2 women
- make that 2 women looking very confused
Not a good senario. I've had myself a heaping helping of highway car trouble, so I felt the need to stop. If you have never had the highway car crisis, you can't relate. But, if you have- you understand how terrified you are that some soda drinking, radio surfing, child tending idiot is going to barrel into your stationary vehicle at 65mph. To make a long story short these two chicks were far from home and without a spare tire OR jack. I will not elaborate on how silly this move was on their behave. Regardless, I found a keen use for a cell phone and within the hour they were homeward bound.
I believe in random acts of kindness. It made me sad to hear that they had been sitting on the side of the road for over an hour and not one person had stopped to assist. While we were waiting for a ride, a state highway patrol officer actually passed us by without so much as a brake light. Very disappointing. Indeed. I suppose most people do not stop because they believe the person is a serial killer... or they are just in a hurry to get on with their life. I have always believed that life comes full circle eventually and karma is mighty ugly when it catches up with you. When you see someone in need, stop your busy life and lend a hand. Next time it could be you walking in their shoes.

Mexican Inspired Dinner
Salsa Chicken, Cheese and Rice
INGREDIENTS
1 pound skinless, boneless chicken breast halves - cubed
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 (14.5 ounce) can chicken broth
1 (8 ounce) jar salsa
2 cups instant rice
8 ounces shredded Cheddar cheese
DIRECTIONS
In a large skillet over medium high heat brown the cubed chicken in oil, salt and pepper until cooked through and juices run clear. Add the broth and salsa and bring to a boil.
Once the liquids are boiling, turn off the heat and stir in the instant rice. Sprinkle all of the cheese on top. Cover and let sit for 5 minutes, then serve.
MMMM...Yummy! Add a salad with fresh red pepper slices and cheese.

This is a list of ten, so I could not include every song by George Strait or James Taylor. But, to be sure they are my fav. I nearly lost my mind when I finally got to see the "Great Strait" in concert February 16th, 2007. Each song has a special place in my heart and seems to transport me to a different place in time. I would like to thank my mother for raising her children to have a fine appreciation for ALL types of music. Some of my greatest memories are sitting cross-legged on the living room floor with her, listening to her record collection. Two Decades and thousands of songs later, three twenty-something kids are driving down the highway singing those same songs together in unison- at the top of their lungs in between giggles!

One More Picture...
IF it were up to me and we lived somewhere other than the city, I wouldn't blink an eye. This is the reason we would never breed dogs. I would never be able to find homes good enough for these beautiful pups. Alas, I have promised Justin no more dogs until we have outlived the three we have. Ohhh, but to dream...

Guilty!
The List of To-Do's
I have procrastinated. For Two Weeks. And now, I must suffer.
It was fun while it lasted, but now I must.......

1.) Wash like 10 loads of laundry, including all the blankets in my house.
2.) Clean my car out- it is REALLY bad!!!!!
3.) Put together my NEW clothing rack from Ikea ($4.99- what a steal!)
4.) Plant my flowers and do all the trimming (I loath yard work)
5.) Give three labradors a bath. In a baby pool. In the back yard.
6.) Run the vacuum through the entire house.
7.) Finish tearing down the wallpaper in the kitchen.
There is a lot more to do, but I think I will stop there. Let's not get carried away! It's suppose to be the day of rest.
